Questions worth asking
What happens to your data: is it used for training, retained, or discarded? Which model version is behind the feature, and what happens when the vendor changes it silently?
Metering
Tokens, credits, generations, seats. Ask what a credit buys, whether unused credits roll over, and what happens when they run out mid-task.
What to test
Run your real workload, not the sample. Quality on generic prompts tells you nothing about quality on your documents.
